Matcha gingerbread & raw spicy hot chocolate + a giveaway

I hate the people that say "this is my favourite month" every time the seasons change. S T O P. Which point of favourite don't you get? You only get to pick one damn month. And please stop saying December is your favourite month, because it's one of the shittiest months in the year. You have to work your ass off three times as much as usual and be boozy at the same time. But like every month, December has it's perks too. I like the snow, I like the presents (who doesn't) and I like our family trips to Italy. We're hopefully going next week too (COME ON SNOW, PLEASE, I NEED THIS). Back to why I appreciate December. Well there's literally always cake and cookies + I get to be boozy all the time and nobody will judge me. We're all free people in December. I get to buy myself presents and nobody will tell me I'm weird and no of course I didn't already buy 3 cookbooks. No way.

I got the idea for these cookies on a rainy day in TOZD. I was sipping on my soy matcha chai latte and my mind went all like - DAMN. I need to make this into cookies and so I did. I still can't believe how good these are. I did make a gluten free and not gluten free version, but I must admit I prefer the gluten free version as they are a bit more crumbly. They are based on brown rice flour, tapioca starch and xanthan gum (non gluten free version is based on light spelt flour). Coconut is used for the fat - not much, just to make these "buttery" enough. Then there's the matcha and spices - ground cinnamon, ginger, cloves, nutmeg, cardamom and white pepper to be exact. There's also raw cane sugar as it is December after all.

Matcha gingerbread :

inspired by this coconut oil pie crust

1 cup superfine brown rice flour (available in Slovenia too!)
1/4 tapioca starch
1 1/4 teaspoon xanthan gum
/ or
1 1/4 cup light spelt flour

1/2 teaspoon baking powder
1/3 cup granulated cane sugar
2 teaspoons matcha powder
1,5 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
a pinch of ground white pepper
zest of one lemon
a pinch of salt

1/4 cup coconut oil (room tempterature)
1/4 cup light coconut milk

Sift all the dry ingredients into a large bowl and mix well - everything has to be combined properly. Pour in the coconut oil and mix with your hand until the mixture looks like wet sand. At this point - put it into the freezer for 10-15 minutes. Pour in the coconut milk and knead into a dough. Let it rest in the fridge for 15 minutes and roll into a thin rectangle. Cut out your cookies and re-roll the dough as you go. You should get about 30-40 cookies out of this depending on the size of your cookie cutters. Chill them in the freezer for 15 minutes. Meanwhile, preheat your oven to 180ºC/350F and bake the cookies for 20-25 minutes. They won't be completely hard once they come out of the oven, but they'll harden up once they cool.

I think it's time to talk about chocolate. I first wanted to make this recipe into a "cashewnogg" but it didn't really come out so well and I have a high speed blender, but I wanted a recipe that people that don't have one could make too. So I came up with this "actually not that bad for you hot chocolate". All the ingredients are raw as long as you use raw cacao and raw plant milk. Coconut oil is a serious superfood and so is cacao butter. Don't feel bad if you drink this with your breakfast.





Raw spicy hot chocolate : 

1/4 cup of cashews - soaked overnight 
1/2 cup plant milk
1/2 cup water
1/2 tbsp coconut oil (liquid)
1/2 tbsp cacao butter* (liquid)
1 tbsp raw cacao powder
1-2 medjool dates / 1 tbsp maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon cardamom
a pinch of : nutmeg, cloves and black pepper
a splash of vanilla

Put the cashews, milk and water into a high speed blender. Blend it for a minute or two, then let it through a fine sieve. Pour back into the blender, add the dates, fats, dates and spices. Blend until everything is super creamy and smooth. Warm up just a bit, to keep it warm.

  3. V moji kuhinji pozimi največkrat zadiši po čokoladnih piškotkih z vanilijo. So "zdravi", narejeni iz preprostih sestavin, pa še tako zelo hitri! Drobno mleti ovseni kosmiči, ščepec soli in sode bikarbone, kakav, malo kokosa in vanilije, zmečkana banana in "surov" sladkor, malo mleka pa še ščepec ljubezni... Po petnajstih minutah v pečici so pečeni in najraje jih pomakam v topel kakav z rumom :)

  4. V decembru, ko je vrhunec sezone pomaranč, vedno zadiši po jaffa biskvitu (biskvit iz pomaranč, premazan z domačo marelično marmelado in prelit s čokolado), tradicionalni orehovo-lešnikovi ali pekanovi potici in raznovrstnih piškotkih, ki so namenjeni obdarovanju.

Moj je iz Anglije (http://www.dovesfarm.co.uk/biscuits-and-cookies/gluten-free/xanthan-gum-1-x-100g/) , baje pa se ga dobi tudi v kalčku - tako so mi povedali bralci, ko pa sem sam vprašal in iskal ga ni bilo nikoli. Je pa res, da vedno nakupujem v btcju ali na Trubarjevi, kjer sta kalčka manjša.

  6. Med prazniki najraje spečem medenjake (oblite s čokolado ali "okrašene" z orehi), ali kaj še bolj preprostega in zdravega- samo da diši po cimetu in medu, da poskrbiš za še boljše božično vzdušje :)
